Karahi Chicken Curry & Egg Curry




Curry de Pui  "Karahi" / Karahi Chicken Curry

Ingrediente pentru marinata / Ingredients for marinade

1 pui de 1 kg / 1 chicken of 1 kg
200 gr iaurt simplu / 200 gr plain yogurt
sare 1 lingurita / salt 1 teaspoon
suc de lamaie / lemon juice




Ingrediente pentru pui “karahi” / Ingredients for karahi chicken

3 linguri de ulei / unt clarificat / 3 tablespoons oil/ghee
3 cepe / 3 onions
3 rosii / 3 tomatoes
 ½ linguita praf de chilie (ardei iute) / ½ teaspoon hot red chilie powder
3 ½ lingurite masala pentru pui / 3 ½ teaspoon chicken masala
sare (dupa gust) / salt (to taste)
½ cana iaurt acru / ½ cup sour yogurt
3 lingurite suc de lamaie / 3 teaspoon lemon juice
2 ardei iuti verzi / 2 green chillies
frunze de schinduf uscate / dry fenugreek leaves


Mod de preparare 

  • Spala, curata si  taie puiul in 8 bucati. 
  • Marineaza cu sare, lamaie si iaurt timp de 30 de minute. 
  • Incinge uleiul/untul clarificat in tigaie wok (wok inlocuieste karahi) si distuie ceapa maruntita pana prinde o culoare aurie. 
  • Adauga rosiile taiate marunt si praful de chillie (ardei iute rosu) amestecand bine. 
  • Adauga masala pentru pui si sarea (dupa gust) distuind si amestecand inca 2-3 minute. 
  • Adauga bucatile de pui prajindu-le timp de 10 minute, iaurtul acru si amesteca. 
  • Redu focul, acopera si lasa sa fiarba inabusit 15-20 de minute, evitand sa nu se prinda. 
  • Adauga sucul de lamaie, 2 ardei iuti verzi taiati rondele si cateva frunze de schinduf, agita si serveste cu orez simplu fiert.

Preparation

  • Wash, trimm and cut the chicken into 8 pieces. 
  • Marinate with salt, lemon and yogurt for 30 minutes.  
  • Heat  oil/ghee in a karahi (wok) and fry chopped onions till golden. 
  • Add chopped  tomatoes and red hot chilli podwer and stir well. 
  • Add chicken masala and salt (to taste) and stir fry it for 2-3 minutes.
  • Add chicken pieces and fry them for 10 minutes,  beaten curd and mix. 
  • Lower the heat, cover and let it simmer for 15-20 minutes, avoiding it from sticking at bottom. 
  • Add lemon juice, 2 green chillies cut into fine rings and few fenugreek leaves, stir and serve it with plain boiled rice.

Seminte de coriandru / Coriander seeds
Ardei iuti rosii / Red chillies

Chimion / Cumin

Curry de Oua / Egg Curry 
 
Ingrediente / Ingredients
1 lingura ulei / 1 tablespoon oil
4 oua / 4 eggs
2 rosii / 2 tomatoes
2 lingurite pasta de ghimbir si usutoi / 2 teaspoons ginger garlic paste
1 lingurita seminte de chimion / 1 teaspoon cumin seeds
2 lingurite praf de ardei iute rosu / 2 teaspoons red chilli powder
1 lingurita praf de coriandru / 1 teaspoon coriander powder
½ lingurita praf de chimion / ½ teaspoon cumin powder
½ lingurita garam masala
sare (dua gust) / salt to taste
frunze de coriandru / coriander leaves

Mod de preparare:

  • Fierbe ouale pentru 15 sau 20 de minute dupa care curata de coaja si taie in doua pe verticala.
  • Incinge uleiul intr-o tigaie si  adauga semintele de chimion dupa care  adauga ceapa taiata marunt pana devine transparenta. 
  • Dupa aceea adauga pasta de usturoi si ghimbir urmata de rosiile taiate cubulete si sarea.
  • Distuie rosiile pana cand devin moi si adauga praful de ardei iute rosu (chilli), praful de coriandru, praful de chimion si garam masala. 
  • Distuie inca 2 minute dupa care adauga apa. 
  • Dupa aceea adauga si ouale si  lasa la fiert pana se formeaza un sos mai gros.
  • Decoreaza cu frunze de coriandru si serveste cu orez simplu fiert.

Preparation

  • Boil the eggs for 15 to 20 min and after peel the shells and cut them vertically into two halves. 
  • Heat the oil in a pan, add cumin seeds and after add the chopped onions till it becomes translucent.
  • Then add the ginger garlic paste followed by the chopped tomatoes and salt.
  • Fry the tomatoes till they become soft and  add the red chilli powder, coriander powder, cumin powder and garam masala powder. 
  • Fry it for 2 minutes and then add water. 
  • Then add the eggs and let it boil till it forms a thick gravy.
  • Garnish with coriander leaves and serve it with plain boiled rice.
