Brocoli si creveti copti / Roasted broccoli and shrimps




Ingrediente / Ingredients

  • 400 g buchetele de brocoli / 400 g broccoli florets
  • 30 ml ulei de masline extra virgin / 30 ml extra virgin olive oil
  • ½ lingurita seminte de coriandru / ½  teaspoon coriander seeds
  • ½ lingurita seminte de chimion / ½  teaspoon cumin seeds
  • 1 lingurita sare / 1 teaspoons salt
  • 1 lingurita piper negru proapat macinat / 1  teaspoon freshly ground black pepper
  • praf de ardei iute dupa gust /  hot chili powder to taste
  • 250 g creveti / 250 g shrimp
  • 1 lingurita razatura coaja de lamaie / 1 teaspoons lemon zest
  • lamaie sau lime pentru servit / lemon or lime, for serving.

Mod de preparare /  Method of preparation

1. Intr-un castron mare se amesteca broccoli cu 15 ml de ulei, coriandrul, chimionul, sarea, ½ lingurita de piper si praful de ardei iute.
In a large bowl toss broccoli with 15 ml oil, coriander, cumin, salt, ½  teaspoon pepper and chili powder.

2. Intr-un alt bol se amesteca crevetii, uleiul ramas (15 ml), razatura de lamaie, sare si ½ lingurita piper.
In a separate bowl, combine shrimps, remaining 15 ml of oil, lemon zest,  salt and ½  teaspoon pepper.

3. Se imprastie broccoli intr-un singur strat pe o hartie de copt si se coace timp de 10 minute in cuptorul preincalzit.

Spread broccoli as a single layer on a baking sheet and roast for 10 minutes in a preheated oven.

4. Se adauga crevetii pe hartia de copt si se amesteca cu broccoli.
Add shrimp to the baking sheet and toss it with broccoli.

5. Se coace pana cand crevetii sunt opaci si brocoli este fraged si auriu pe margini, in jur de inca 10 minute,
Roast until shrimp are just opaque and broccoli is tender and golden around edges, about 10 minutes more.

6. Se serveste cu feliute (pene) de lamaie sau lime sau se stoarce lamaie sau lime peste creveti si broccoli inainte de servire.
Serve with lemon or lime wedges, or squeeze lemon or lime  juice all over shrimp and broccoli just before serving.

Cartofi condimentati (iuti foc) / Fiery Spiced Potatoes

Ingrediente / Ingredients

  • 12-14 cartofi noi, decojiti si injumatatiti / 12-14 baby new potatoes, peeled and halved
  • ½ lingurita sare / ½ tsp salt
  • 1 lingura ulei / 1 tbsp oil
  • ½ lingurita ardei iuti rosii uscati si zdrobiti / ½ tsp crushed dried red chillies
  • ½ lingurita seminte chimion / ½ tsp cumin seeds
  • ½ lingurita seminte fenicul / ½ tsp fennel seeds
  • ½ lingurita seminte coriandru zdrobite / ½ tsp crushed coriander seeds
  • 1 ceapa marime medie, feliata / 1 medium onion, sliced
  • 3-4 ardei iuti rosii proapeti, tocati / 3-4 fresh red chillies, chopped
  • 1 lingura coriandru proaspat tocat / 1 tbsp chopped fresh coriander (cilantro)

 Mod de preparare / Method of preparation

1. Se fierb cartofii intr-o cratita cu apa sarata pana cand sunt fierti dar totusi fermi. Se iau pe foc si se scurg de apa.
Boil the potatoes in a pan of salted water until just cooked but still firm. Remove from the heat and drain off the water.

2. Intr-o karahi, wok sau tigaie adanca, se incinge rapid uleiul la foc mare, dupa care se da focul la mediu. Se adauga ardeii zdrobiti, semintele de chimion, fenicul, coriandru, putina sare si se prajeste (stir-fry) rapid in jur de 30-40 secunde.
In a karahi, wok or deep pan, heat the oil quickly over a high heat, then turn down the heat to medium. Add the crushed chillies, cumin, fennel and coriander seeds and a little salt and quickly stir-fry for about  30-40 seconds.

3. Se adauga ceapa si se prajeste usurel pana este auriu maro. Dupa, se adauga cartofii noi, ardeii rosii proaspeti si coriandrul proaspat.
Add the onion and fry gently until golden brown. Then add the new potatoes, fresh red chillies and fresh coriander.

4. Se acopera si se prajeste inca 5-7 minute la foc foarte mic. Se servesc calzi.
Cover and cook for 5-7 minutes over a very low heat. Serve hot.

Curry de ciuperci / Mushroom curry

Ingrediente / Ingredients

  • 50 ml ulei / 50 ml oil
  • 1 lingurita de seminte de chimion / 1 tsp cumin seeds
  • ½ lingurita boabe de piper negru / ½  tsp black peppercorns
  • 8 pastai de cardamom verde / 8 green cardamom pods
  • ½ lingurita de curcuma macinata / ½  tsp ground turmeric
  • 2 cepe, tocate fin / 2 onions, finely chopped
  • 2 lingurite chimion macinat / 2 tsp ground cumin
  • 2 lingurite coriandru macinat / 2 tsp ground coriander
  • 1 lingurita garam masala / 1 tsp garam masala
  • 2 ardei iuti verzi proaspeti, tocati fin / 2 fresh green chillies, finely chopped
  • 4 catei de usturoi, zdrobiti / 4 garlic cloves, crushed
  • 4 cm radacina de ghimbir proaspat, ras / 4 cm piece fresh root ginger, grated
  • 800 g rosii tocate la conserva / 800 g can chopped tomatoes
  • 2 lingurite de sare sau dupa gust / 2 tsp salt or to taste
  • 900 g ciuperci (albe), injumatatite sau tocate / 900 g (white) mushrooms, halved or chopped
  • coriandru proaspat tocat pentru ornat / chopped fresh coriander (cilantro) to garnish
Mod de preparare / Method of preparation

1. Se incinge uleiul intr-o cratita mare si se prajesc semintele de chimion, boabele de piper, pastaile de cardamom si curcuma pentru 2-3 minute.
Heat the oil in a large heavy pan and fry the cumin seeds, peppercorns, cardamom pods and turmeric for 2-3 minutes.

2. Se adauga ceapa si se prajeste aproximativ  5 minute pana devine aurie.
Add the onion and fry for about 5 minutes until golden.

3. Se adauga si chimionul, coriandru macinat, garam masala si se prajeste mai departe, 2 minute.
Stir in the cumin, ground coriander and garam masala and fry for further 2 minutes.

4. Se adauga ardeii iuti, usturoiul si ghimbirul si se prajeste 2-3 minute, amestecand tot timpul pentru a preveni prinderea condimentelor de tigaie.
Add the chillies, garlic and ginger and fry for 2-3 minutes, stirring all the time to prevent the spices from sticking to the pan.

5. Se adauga rosiile si sarea. Se aduce la fierbere si se lasa sa fiarba timp de 5 minute.  
Add the tomatoes and salt. Bring to the boil and simmer for 5 minutes.

6. Se adauga ciupercile si se fierbe pana cand se evapora apa lasata de ciuperci.
Add the mushrooms and simmer until mushroom water evaporates.

7. Se presara cu coriandru tocat proaspat inainte de a servi.
Sprinkle with chopped fresh coriander before serving.

! Ciupercile albe se pot inlocui cu oricare alt fel de ciuperci.
Pot fi adaugate ciuperci uscate. Inaite de a fi folosite, ciupercile uscate se tin la inmuiat in apa si se adauga la reteta impreuna cu rosiile.
! You can substitute the white mushrooms with any other mushrooms.
Dry mushrooms can be added. Soak dried mushrooms before using and add the to the recipe with the tomatoes.

Curry de ciuperci merge bine cu orez, preparate din carne dar de asemenea, este foarte bun servit simplu.
Curry de ciuperci se poate folosi ca sos pentru paste (Paste cu ciuperci).
Mushrooms curry goes well with plain rice, meat dishes but it’s also very good served on it’s own.
You can use mushroom curry as a sauce for pasta (Mushroom pasta).

Pui la gratar etiopian / Ethiopian grilled chicken

Ingrediente / Ingredients:

  • 1 kg de pui  (aripi, piept, pulpe) / 1 kg of chicken meat (full chicken, wings, chest, legs)
  • 2 linguri de ceapa rasa / 2 tablespoons ground onion
  • 1 lingurita usturoi ras / 1 teaspoon ground garlic
  • 4 linguri pline berbere (click) (se poate adauga mai mult pentru o aroma mai puternica) / 4 full tablespoons of berbere (click) (you can add more for a stronger flavor)
  • 60 ml apa / 60 ml water

Mod de preparare / Method of preparation:

1. Se taie puiul in bucati mari, se inlatura pielea, se spala si se se cresteaza fiecare bucata / Cut the chicken into big pieces, remove the skin, wash it and make slits on each piece.
2. Ceapa, usturoiul si condimentul berbere se amesteca cu 60 ml de apa pentru a forma o pasta / Mix the onion, garlic and berbere spice mix with 60 ml of water to form a paste.

3. Puiul se freaca cu pasta dupa care se da la firgider 2-3 ore / Rub the chicken with the paste, then refrigerate for 2-3 hours.

4. Dupa 2-3 ore bucatile de pui se frig pe un gratar fierbinte pana sunt rumenite peste tot / After 2-3 hours grill the chicken pices on a hot grill until brown all over.

5. Se serveste langa legume, legume cu orez, salate, etc. / Serve it beside vegetables, vegetables with rice, salads, etc.

Amestecul de condimente Berbere / Berbere Spice Blend



BERBERE este un amestec de condimente, foarte popular in Etiopia.
Bucătăria etiopiană este una a gusturilor puternice.
Berbere este un amestec de condimente uscat sau facut cu ulei sau apa pentru a forma o pasta.

BERBERE is a spice mix, very popular in Ethiopia.
Ethiopian cuisine is one of the strong tastes.
Berbere is a dry spice mix or its made with oil or water to form a paste.

          Ingrediente / Ingredients: 

  • ¼ lingurita seminte de ienibahar / ¼ teaspoon allspice seeds
  • ¾ seminte de cardamom verde / ¾ teaspoon green cardamom seeds
  • 1/8  lingurita de cuisoare /  1/8 teaspoon cloves
  • ½ lingurita seminte de coriandru / ½  teaspoon coriander seeds
  • 1 lingurita seminte de chimion /1 teaspoon cumin seeds
  • 1 lingurita seminte de schinduf / 1 teaspoon fenugreek seeds
  • ½ lingurita piper negru boabe / ½  teaspoon black peppercorns
  • de la 4 la 6 linguri combinatie de piper cayenne sau fulgi de ardei iuti rosii si boia dulce /  4 to 6 tablespoons of a combination of ground cayenne pepper or red pepper flakes and paprika
  • 1/8 lingurita scortisoara macinata / 1/8  teaspoon ground cinnamon
  • ¼ lingurita nucsoara macinata / ¼  teaspoon ground nutmeg
  • ¼ lingurita curcuma macinata / ¼  teaspoon ground turmeric
  • 1 ½ lingurita sare / 1 ½ teaspoon salt
  • 1 lingurita de ghimbir macinat uscat / 1 teaspoon ground dried ginger

    Mod de preparare / Method of preparation:

    1. Se toasteaza toate semintele si cuisoarele la foc mic intr-o tigaie mica pentru cateva minute amestecand constant / Toast all the seeds and whole cloves in a small frying pan over low heat for few minutes, stirring constantly.

     
    2. Se indeparteaza de pe foc si se lasa sa se raceasca / Remove from heat and allow to cool.
    3. Semintele si cuisoarele toastate se macina dupa care se amesteca cu toate condimentele ramase / Grind the toasted seeds and cloves and after mix with all remaining ingredients.
    4. Praful berbere se pastreaza intr-un recipient bine sigilat / Store the berbere powder in a tightly-sealed container.
    5. Acest amestec poate fi folosit cu multe combinatii de legume, orez si carne / This mixture can be used with many combinations of vegetables, rice or meat.

    ! In loc de seminte se pot folosi condimente macinate / ! Instead of seeds you can use ground spices.

Kefta de pui / Chicken kefta



Ingrediente / Ingredients:
  • 800 g carne tocata de pui / 800 g chicken minced meat
  • 1 ardei capia / 1 kapia pepper
  • 1 ceapa / 1 onion
  • 4-5 catei de usturoi / 4-5 garlic cloves
  • 1 legatura patrunjel verde / 1 bunch green parsley
  • 1 lingurita chimen macinat / 1 teaspoon ground caraway seeds
  • 1 lingurita piper negru macinat / 1 teaspoon ground black pepper
  • 8 boabe de ienibahar macinat / 8 ground allspice seeds
  • 1 lingurita cimbru uscat / 1 teaspoon dry thyme
  • cateva seminte de cardamom macinate / few ground cardamom seeds
  • 1 lingurita boia iute / 1 teaspoon cayenne pepper
  • sare dupa gust / salt to taste
  • 2 lingurite boia dulce / 2 teaspoons paprika
  • 1 lingurita coriandru macinat / 1 teaspoon ground coriander
  • 5 cuisoare macinate / 5 ground cloves

Mod de preparare / Method of preparation:

1. Se rade ceapa si usturoiul pe razatoarea fina, se toaca ardeiul si patrunjelul marunt, apoi se amesteca cu carnea tocata / Grate the onion and garlic on a fine grater, chop the kapia pepper and parsley finely then mix with the minced meat.

 
2. Se adauga condimentele si se amesteca bine pana se omogenizeaza, apoi se lasa la frigider 1 ora / Add the spices and mix well until smooth, then refrigerate it for  1 hour.


 
3. Apoi, se ia o palma plina de amestec si se modeleaza pe betele de frigarui (tinute in prealabil 30 de minute in apa) carnaciori sau chiftele lunguiete, potrivite, se ung cu ulei si se rumenesc pe gratarul incins 4-5 minute pe fiecare parte / Then take a palm full of the mixture and shape on the skewers (left for 30 minutes in water), grease them with oil and brown them 4-5 minutes on each side on the hot grill. 



 
4. Se servesc imediat cu lipie sau garnisite cu orez, cuscus, cartofi, gogosari murati sau cu sos de iaurt (vezi reteta Salata libaneza cu iaurt si castraveti(Khyar Bi Laban) / Lebanese cucumber andyogurt salad (Khyar Bi Laban) ) / Serve immediately with arabic bread or garnished with rice, cous-cous, potatoes, pickled peppers or yogurt sauce (see recipe Salata libaneza cu iaurt si castraveti (Khyar BiLaban) / Lebanese cucumber andyogurt salad (Khyar Bi Laban) ).
