Tort de morcovi / Carrot cake




Ingrediente / Ingredients

  • 100 g nuci prajite si tocate / 100 g toasted and chopped walnuts
  • 340 g morcovi razuiti / 340 g grated carrots
  • 280 g faina / 280 g flour
  • 1 lingurita bicarbonat / 1 tsp sodium bicarbonate
  • 1 ½ lingurita praf de copt / 1 ½ baking powder
  • ½ lingurita sare / ½ tsp salt
  • 1 ½ lingurita scortisoara / 1 ½ tsp cinnamon
  • 4 oua mari / 4 large eggs
  • 300 g zahar / 300 g sugar
  • 200 ml ulei / 200 ml oil
  • 2 lingurite esenta vanilie / 2 tsp vanilla essence 
Glazura din crema de branza / Cream Cheese Frosting

  • 90 g unt / 90 g butter
  • 340 g crema branza / 340 g cream cheese
  • 350 g zahar pudra / 350 g sugar powder
  • 2 lingurite esenta vanilie / 2 tsp vanilla essence
  • zeama de la 1 ½  lamai / 1 ½  lemon juice

Mod de preparare / Method of preparation

1. Prancalziti cuptorul la 180 ̊ C.  Ungeti 2 tavi de diametrul 26 cm.
Preheat the oven to 180 ̊ C. Grease 2 x 26 cm diameter trays.

2. Prajiti nucile aprox 8 min, lasati sa se raceasca si tocatile. Curatati si dati prin razatoarea fina morcovii.
Toast the walnuts for 8 minutes, let them cool and chop them. Peel the carrots and grate them on the fine grater.

3. Intr-un bol separat amestecati ingredientele solide: faina, bicarbonatul, praful de copt, sarea si scortisoara.
In a bowl mix the dry ingredients: flour, sodium bicarbonate, baking powder, salt and cinnamon.

  
4. Mixati ouale apoi adaugati treptat zaharul si continuati sa mixati pana se omogenizeaza. Adaugati uleiul apoi vanilia.
Mix the eggs then add sugar and continue mixing until smooth. Add the oil then vanilla.



5. Adaugati apoi ingredientele solide si amestecati doar atat cat sa incorporate faina in aluat. Cu o spatula incorporati morcovii si nucile.
Then add dry ingredients and mix just enough to incorporate the flour into the dough. With a spatula incorporate carrots and nuts.



 
6. Turnati in tavi si dati la cuptor aprox. 30 min.
Pour into trays and bake for aprox. 30 minutes.

7. Scoateti din cuptor si lasati sa se raceasca 5-10 min apoi scoateti-le din tava si lasati-le sa se raceasca complet.
Take it out of oven and let it cool for 5 to 10 minutes and then remove it from the tray and let it cool completely.

  
8. Pentru glazura mixati branza si untul la viteza mica apoi adaugati treptat zaharul pudra. La sfarsit adaugati vanilia si zeama de lamaie.
For the frosting mix the cheese and butter on low speed and then add powdered sugar. At the end add vanilla and lemon juice.

 

9. Asezati un blat, glazura, al doilea blat, glazura deasupra si se decoreaza.
Add a cake base, frosting, second cake base, frosting on top and decorate.

Legume cu orez prajit / Vegetable fried rice




Ingrediente / Ingredients

  • 300 g orez basmati / 300 g basmati rice
  • 2 cepe de marime medie tocate / 2 medium chopped onions
  • 400 g ciuperci feliate / 400 g sliced mushrooms
  • 1 morcov ras / 1 grated carrot
  • 2 maini de mazare / 2 handfuls of peas
  • 2 ½  linguri sos de soia / 2 ½ tbsp soy sauce
  • 1 ½ lingurita fulgi de chilli / 1 ½  tsp chilli flakes
  • 50 ml ulei / 50 ml oil
  • sare dupa gust / salt to taste

Mod de preparare / Method of preparation

1. Orezul se lasa la inmuiat timp de 20 de minute. Se scurge si se pune intr-o oala mare de apa clocotita cu sare, se readuce la fierbere si se fierbe timp de 10 minute.
Soak rice for 20 minutes. Drain the rice and place it in a large pan of boiling salted water, bring back to the boil and cook for 10 minutes.
2. Dupa 10 minute se strecoara si se pune deoparate sa se raceasca.
After 10 minutes drain and set aside to cool.
3. Intr-o tigaie se pune uleiul si se incalzeste. Se adauga ceapa si se prajeste la foc mediu pana este aurie.
In a pan, add oil and heat. Add the onions and fry on medium heat until golden brown.


4. Odata de ceapa este moale se adauga morcovii rasi, mazarea si se prajeste inca 5 minute. Dupa se adauga ciupercile feliate si se prajeste pana cand apa lasata de ciuperci se evapora.
Once the onions are tender, add grated carrots, peas and fry for another 5 minutes. After add sliced mushrooms and fry until all mushrooms water evaporates.



5. La sfarsit se adauga fulgii de chilli, orezul, sosul de soia si se amesteca bine.
Finally add chilli flakes, rice, soy sauce and mix well.

Chiftelute / Meatballs





Ingrediente / Ingredients

  • 800 g carne tocata amestec (vita si porc) / 800 g minced mixed minced meat (beef and pork)
  • 1 ceapa mare / 1 big onion
  • 1 morcov mare fiert si taiat in bucati / 1 big carrot, boiled and cut into big pieces
  • 1 ardei gras rosu / 1 big red capsicum
  • 5 catei de usturoi / 5 garlic cloves
  • 2 lingurite cimbru uscat / 2 tsp dried thyme
  • mana plina frunze de patrunjel tocate marunt / one full hand of chopped parsley leaves
  • sare si piper dupa gust / salt and pepper to taste
  • fulgi de chilli dupa gust (optional) / chilli flakes to taste (optional)
  • 2 oua / 2 eggs
  • 4 felii de paine neagra inmuiate in lapte si stoarse bine / 4 brown bread slices soaked in milk and squeezed well
  • seminte de susan (cat este necesar) / sesame seeds (as needed)
  • seminte de in (cat este necesar) / flaxseeds as needed
  • pesmet (cat este necesar) / breadcrumbs as needed

Mod de preparare / Method of preparation

1. Curatam ceapa, cateii de usturoi si ardeiul gras de seminte si cotor dupa care taiem toate legumele in bucati mari.
Peel the onion, garlic cloves and capsicum of seeds and spine and cut it into big pieces.

2. Se pune in robotul de bucatarie: ceapa, morcovul, ardeiul gras, usturoiul, painea si se mixeaza pana se obtine o pasta.
Place in the food processor: onion, carrot, capsicum, garlic, bread and mix until you get a paste.




3. Intr-un castron mare se pune carnea iar peste pasta de legume, 2 oua, cimbru, sare, piper, fulgii de chilli si pesmet daca compozitia este prea moale (eu am pus 4 linguri).
Place the meat in a large bowl and add the vegetable paste, 2 eggs, thyme, salt, pepper, chilli flakes and breadcrumbs if the mixture is too soft (I added 4 tablespoons).




 
4. Pe o farfurie se amesteca semintele de susan cu cele de in.
On a plate mix the sesame seeds with the flaxseeds.


 5. Din amestecul de carne se formeaza bilute de marime medie care se dau prin amestecul de seminte SAU se tavalesc prin pesmet.
Form medium size balls from the meat mixture  and roll them into the seeds mixture OR roll them through breadcrumbs.


 

6. Aseaza ciftelutele date prin amestecul de seminte pe o tava tapetata cu hartie de copt si se dau la cuptor in jur de 50 de minute iar cele tavalite prin pesmet se prajesc in ulei incins pana se rumenesc uniform.
Place the meatballs rolled through the seed mixture on a tray coated with parchment paper and put them in the oven for around 50 minutes and the ones rolled through the breadcrumbs, fry them in oil until brown all over.

Varza etiopiana / Ethiopian Cabbage Dish

Ingrediente / Ingredients

  • 100 ml ulei masline (in reteta se cere 120 ml) / 100 ml cup olive oil (in the recipe is asking 120 ml)
  • 4 morcovi taiati in felii subtiri / 4 carrots, thinly sliced
  • 1 ceapa taiata in felii subtiri / 1 onion, thinly sliced
  • 1 lingurita sare de mare / 1 teaspoon sea salt
  • ½ lingurita piper negru macinat / ½ teaspoon ground black pepper
  • ½ ligurita chimion macinat / ½  teaspoon ground cumin
  • ¼ lingurita curcuma macinata / ¼  teaspoon ground turmeric
  • ½ cap de varza tocat / ½  head cabbage, shredded
  • 5 cartofi curatati si taiati in cubulete de 1 inch / 5 potatoes, peeled and cut into 1 inch cubes

Mod de preparare / Mehod of preparation


1. Se incinge uleiul de masline intr-o tigaie la foc mediu / Heat the olive oil in a skillet over medium heat. 
2. Se prajesc morcovii si ceapa in jur de 5 minute in ulei fierbinte / Cook the carrots and onion in the hot oil about 5 minutes.

3. Se pune sarea, piperul, chimionul, curcuma si varza si de prajeste inca 15 – 20 de minute / Stir in the salt, pepper, cumin, turmeric, and cabbage and cook another 15 to 20 minutes.

4. Se adauga cartofii si se acopera. Se reduce focul la mediu-mic si se gateste pana cartofii sunt moi, 20 – 30 minute / Add the potatoes and cover. Reduce heat to medium-low and cook until potatoes are soft, 20 to 30 minutes.
