Harissa




Harissa este o pasta de chili care se gaseste on bucataria nord africana, marocana, algeriana si tunisiana.
Harissa is a chili paste that is found in North African cooking, mainly Moroccan, Algerian, and Tunisian cuisine.
Harissa se adauga la couscous, supe, paste si alte retete.
Add harissa to couscous, soups, pastas and other recipes.

Ingrediente / Ingredients
  • 24 ardei iuti (chili) uscati / 24 dried red chili peppers
  • 5-6 catei de usturoi / 5-6 cloves garlic
  • 1 lingurita sare / 1 teaspoon salt
  • 4 linguri ulei de masline / 4 tablespoons olive oil
  • 2 lingurite seminte de coriandru  / 2 teaspoons coriander seeds
  • 2 lingurite seminte de chimen  /  2 teaspoons caraway seeds
  • 1 lingurita de chimion / 1 teaspoon cumin


 

Mod de preparare / Method of preparation

1. Ardeii iuti se inmoaie in apa fierbinte timp de 30  minute. Se scurg. Se inlatura coditele si semintele  / Soak the dried chilies in hot water for 30 minutes. Drain. Remove stems and seeds.


2. Se macina coriandrul si semintele de chimen / Ground coriander and caraway seeds.
3. Intr-un blender se amesteca chilli, usturoiul, sarea si uleiul de masline / In a blender combine chilli peppers, garlic, salt and olive oil.
4. Se adauga condimentele ramase si se amesteca pana cand se obtine o pasta omogena /  Add remaining spices and blend to form a smooth paste.

Gulas de porc/ Pork goulash

Ingrediente/Ingredients
  • 500 g pulpa de porc / 500 g pork thigh
  • 50 ml ulei / 50 ml oil
  • 2 cepe / 2 onions
  • 2 morcovi / 2 carrots
  • 3 cartofi / 3 potatoes
  • 250 ml smantana / 250 ml cooking cream
  • 3 linguri faina / 3 tablespoons flour
  • 3 linguri boia dulce / 3 tablespoons paprika
  • ½ lingurita boia iute / ½ teaspoon cayenne pepper
  • sare dupa gust / salt (to taste)
  • chimen dupa gust/ caraway seeds (to taste)
  • piper dupa gust / pepper (to taste)
 
Mod de preparare/ Method of preparation

  1. Speli carnea si o tai cubulete / Wash the meat and cut it into cubes.
  2. Toci ceapa si o calesti in ulei / Chop the onion and sauté in oil.
  3. Adaugi carnea si rumenesti aproximativ 5 minute / Add the meat and fry it for aprox. 5 minutes.
  4. Adaugi boiaua amestecand usor, apa fierbinte cat sa acopere carnea, sarea si chimenul / Add the paprika, mixing slowly and then the hot water, just enough to cover the meat and add the cumin and salt.
  5. Acoperi si lasi sa fiarba,  amestecand din cand in cand / Cover and let it boil, stirring occasionally.
  6. Adaugi apa calda daca e nevoie / Add warm water if needed.
  7. Adaugi cartofii si morcovii taiati cubulete / Add the cubed potatoes and carrots.
  8. Amesteci faina cu smantana si torni sosul in cratita / Mix the flour with the cream and pour the sauce in the pot.
  9. Lasi sa fiarba inca 20-30 de minute /Let it cook for another 20-30 minutes.
  10. Adauga sare si piper dupa gust / Add salt and pepper to taste.

Chifle cu chimen si cascaval / Caraway and cheese buns

Ingrediente / Ingredients

  • 220 ml. apa calduta / 220 ml warm water
  • 1 ¼ pliculet de drojdie uscata / 1 ¼ sachet dry yeast 
  • 600 gr. faina / 600 gr. flour
  • 2 oua / 2 eggs
  • 1 lingura cu miere / 1 tbsp. honey
  • 35 gr. unt moale / 35 gr. softened butter
  • 1 lingurita sare  / 1 tsp. salt
  • 200 gr. cascaval ras / 200 gr. grated cheese
  • 50 gr. parmesan ras / 50 gr. grated parmesan
  • 1 ½ lingurita seminte de chimen / 1 ½ tsp. caraway seeds
  • seminte de susan / sesame seeds
Preparare / Preparation

1. Se amesteca faina cu drojdia si se lasa 10 minute / Mix flour with the dry yeast and leave it for 10 minutes.

2. Dupa 10 minute se adauga 1 ou, untul, sarea, mierea si se framanta cu cei 220 ml. de apa  pana se obtine un aluat elastic / After 10 minutes add 1 egg, butter, salt, honey and knead with the 220 ml of water till you get an elastic dough

3. Se intinde cu mainile aluatul si se presara cascavalul, parmesanul ras, chimenul si se framanta pana se incorporeaza in aluat /Spread dough by hand and sprinkle the grated cheese, grated parmesan, caraway seeds and knead until is incorporated in the dough

4. Pune coca la crescut, la cald timp de 1 ora pana-si dubleaza volumul /  Put the dough to rise in warm place for about 1 hour until it doubles in size
5. Pe masa infainata se formeaza chifle de marimi mici, mijloci sau mari / On the table dusted with flour, form small, midium or large sized buns
6. Chiflele se lasa inca 30 de minute la crescut in tava / Leave the buns to rise in the tray for another 30 more minutes

7. Dupa 30 de minute se ung usor cu un ou batut peste care se presara seminte de susan si se da la cuptor in jur de 25 de minute la foc mediu / After 30 minutes brush it lightly with a beaten egg, sprinkle some sesame seeds on it and bake around 25 minutes on medium heat

8. Sunt foarte aromate si se servesc proaspete la micul dejun cu unt sau simple/They are very aromatic and can be served for breakfast with butter or simple, as is.
